Spiced Oat Flour Pancakes.

Instead of making traditional pancakes on Sunday mornings, try the oat flour version! These Spiced Oat Flour Pancakes have a hint of cinnamon and nutmeg to add a warm feeling to your mornings.

Oat Flour Pancakes Ingredient Breakdown

  • Oat flour: Oat flour can be tricky to work with. It is very light in weight but more absorbent than all-purpose flour As the batter sits it will thicken, you can add more oat milk (or any other plant-based milk) to thin out the batter
  • Baking powder: To add a lift to the pancake
  • Cinnamon and Nutmeg: These 2 spices work together so well, and in this oat flour pancake it feels cozy!
  • Brown sugar: This is an optional ingredient, adds a bit of sweetness. I usually leave it out because I eat pancakes with lots of maple syrup
  • Salt: Just a sprinkle is needed here
  • Egg: Binds the ingredients together. I have not tried using egg-alternatives in this recipe
  • Vanilla extract: Only for taste
  • Oat milk: Currently my favourite of all milks and it works so well here. I used Earth’s Own Unsweetened Vanilla and Original, and both versions work for this recipe

How To Make Pancakes

  1. Start with turning on the griddle or frying pan to medium-high heat
  2. Combine the dry ingredients and wet ingredients together, you do not have to get rid of any lumps in the batter
  3. Coat the cooking surface with the cooking spray or butter, and do this in between each pancake
  4. Using a 1/4 measuring cup will make sure each pancake is the same size, pour the batter on the cooking surface
  5. Once the batter starts to bubble, flip to the other size. Remove from the griddle and set aside. Continue with the rest of the batter
  6. As the batter sits it may become thick (oat flour is very absorbent), add in more oat milk to help with consistency
  7. Serve warm with fresh fruit, coconut whipped cream or maple syrup

Spiced Oat Flour Pancakes

Ingredients
  

  • 1 1/2 cup oat flour
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp brown sugar (optional)
  • sprinkle of salt
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cup oat milk

Instructions
 

  • Turn on griddle to medium heat
  • Mix together oat flour, baking powder, ground cinnamon, ground nutmeg and brown sugar in a large mixing bowl
  • Add egg, vanilla and oat milk to mixture and mix until combined
  • Spray the surface with oil or rub a stick of butter on the griddle or frying pan. Using a 1/4 measuring cup, scoop the pancake batter onto the griddle, once the batter begins to bubble, flip the pancake to cook the other side
  • Spray with oil or use butter between each pancake. Repeat until all the batter is cooked, serve warm

Notes

  • Best made and consumed in the same day
