Homemade Rainbow Chip Cookies will add colour to your day! These cookies are soft and airy, like biting into a little rainbow cloud. There is a small amount of butterscotch chips too, it adds a bit of sweetness and a golden surprise! These cookies are perfect for celebrations or birthdays because they are so fun to look at! Or make them to brighten up a gloomy day.

Homemade Rainbow Chip Cookies are similar to the Chips Ahoy! brand. However, these cookies are super soft, like eating a slice of funfetti birthday cake. These cookies can be easily mixed up especially if you are in a hurry because it can be done by hand and requires NO CHILL TIME! The perfect last-minute birthday cookie.

Homemade Rainbow Chip Cookies Ingredient Breakdown

  • All-purpose Flour, Baking Soda and Salt: Your essential dry ingredients. Baking soda gives lift to the cookies and salt balances sweetness from sugar
  • Melted Butter: The melted butter provides the right amount of crust and an overall even bake in each cookie
  • Sugars: Sugar tenderizes the cookie dough and adds to the softness of the cookie. Although tempting, I don’t recommend cutting down the sugar. I personally cut down on the sugar content in most recipes, and I considered this when designing this recipe
  • Eggs: Add fat and binds the rainbow chip cookie dough together
  • Vanilla: Essential flavouring
  • Rainbow Bit Chips: Rainbow Bit Chips make this recipe! If you live in Ontario you can search for them at Bulk Barn or Sweetapolita. An alternative are mini M&Ms, which also tastes amazing in this recipe
  • Butterscotch Chips: The butterscotch chips adds some sweetness from the sugar we previously cut out. It also reminds me of a “pot of gold” we would find at the end of the rainbow!

How to Make Rainbow Chip Cookies

  1. Preheat oven: Preheat the oven to 350°F. Cookies bake the best in ovens that are properly heated to the correct temperature.
  2. Mix dry ingredients: In a mixing bowl, combine all dry ingredients (flour, salt, baking soda) and whisk to combine.
  3. Mix wet ingredients: In another mixing bowl, whisk the melted butter and sugars together.
  4. Add in eggs: Then add the eggs one at a time to the wet ingredients, whisk to combine. Whisk in the vanilla extract.
  5. Fold in the fun stuff: Fold in the rainbow bit chips (or M&MS) and the butterscotch chips.
  6. Scoop: Use a cookie scoop to scoop the cookie dough on baking trays. Add in extra butterscotch chips (optional). Do not flatten the cookies, they will spread on their own.
  7. Bake: Bake for 12 minutes, remove the cookies and let cool on the baking tray for another 5 minutes. Then transfer to a cooling rack to cool completely.

  1. Can you freeze Rainbow Chip Cookies? Yes! Freeze them unbaked for up to 2 months. Bake as needed.
  2. How long do these cookies last? These cookies will last up to 1 week, and up to 1 month frozen.
  3. What are Rainbow Bits made from? Depending on the brand, Rainbow Bits will be made from different ingredients. But these Rainbow Bits (From Bulk Barn) are made with chocolate and candy coated.
  4. Where can I find Rainbow Bit Chips? Find them at your local craft store, Bulk Barn (Canada) or Sweetapolita.
  5. Can I substitute ingredients? If you cannot find Rainbow Bits, substitute for M&Ms. You can switch the butterscotch chips with chocolate chips!

Ingredients
  

  • 2 1/4 cup (300g) all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup (100g) melted butter, slightly cooled
  • 1/2 cup (100g) white granulated sugar
  • 1/2 cup (100g) dark brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup rainbow bit chips
  • 1/2 cup butterscotch chips + extra for garnish

Instructions
 

  • Preheat oven to 350°F.
  • Combine flour, baking soda and salt in a bowl, set aside.
  • In a separate bowl, whisk melted butter, white sugar and brown sugar together until smooth.
  • Add eggs one at a time while mixing in-between, add vanilla extract and mix.
  • Fold in rainbow chips and butterscotch chips.
  • Using a spoon or ice cream scoop, drop the cookies on a baking sheet lined with a silicone baking mat. Using extra butterscotch chips, push a few into the cookie.
  • Bake for 12 minutes, until bottom of cookie is light brown.
  • Let cookies sit on baking sheet for 5 minutes and transfer to a wire rack.
  • Cool completely before serving.

Notes

  • Step 6: Most cookies require dough to be refrigerated for an hour, this recipe does not need it. If you do have to refrigerate, add some baking time
  • Step 6: After you scoop the cooking dough onto the baking sheet, do not flatten the cookies. The cookies will spread out on their own
  • Step 7: The cookies will come out of the oven very soft, but once it starts cooling, they will harden
  • Freezing: Freeze them unbaked for up to 2 months. Bake as needed. 
  • Make-ahead: These cookies will last up to 1 week, and up to 1 month frozen (baked).
  • Substitutions: If you are unable to find rainbow chips, sub in mini M&Ms. Switch the butterscotch chips for chocolate chips.
