Easy Dairy Free Chocolate Chip Muffins

Dairy Free Chocolate Chip Muffins are filled with mini dairy free chocolate chips, coconut oil and oat milk!

We all love those coffee shop fluffy muffins – packed with chocolate with huge muffin tops! Sometimes I will indulge for my afternoon snack but I know that dairy-free chocolate chip muffins are a bit healthier.

With simple ingredients and a muffin pan, you can create these delicious muffins at home!

Missing: Baking Powder

Ingredients You Need 

All Purpose Flour. This recipe uses all purpose flour. I have not tried gluten-free flours yet, but I am looking forward to it! 

Baking Powder. The leavening agent to lift our muffins for the perfect muffin tops.

White Granulated Sugar. To sweeten the muffins.

Silk Vanilla Oat Milk. I love this type of dairy free milk! In some cases, the brand of Oat Milk does affect the taste of the muffin! Also, experiment with other dairy free milk like coconut milk or almond milk. 

Eggs. Despite what some may say, eggs are not a dairy product! Use room temperature eggs for this recipe.

Coconut Oil. To replace butter, coconut oil is used. Melt and slightly cool the coconut oil before adding to the ingredients.

Enjoy Life Semi-Sweet Dairy Free Mini Chocolate Chips. 3/4 cup of chocolate chips is the perfect amount for these dairy-free muffins! I use semi-sweet but it can be substituted for dark chocolate chips.

Enjoy Life Semi-Sweet Dairy Free Chocolate Chucks. (optional) For extra chocolate, sprinkle chocolate chucks on top of the muffins.

Turbinado Sugar or Sprinkling Sugar. (optional) For those delicious bakery style muffins, sprinkle turbinado or sprinkling sugar on top of the muffins before baking.

How to Make Chocolate Chip Muffins with no Dairy 

This recipe will give 12 muffins!

Preheat oven: Preheat oven to 350°F. Setting the oven at the start of the baking process ensures the oven temperature is at the correct temperature when the muffins go in!

Prep muffin tin: Use muffin cups or a greased muffin tin.

Mix the dry ingredients: In a small mixing bowl, whisk together flour and baking powder. Set aside.

Prep the wet ingredients: In a large bowl, mix together white sugar, oat milk, melted coconut oil and eggs. Use a hand mixer to beat the wet ingredients together until the coconut oil has completely mixed into the batter. 

Combine: Pour the dry ingredient mixture into the wet ingredient batter. Use a hand mixer to incorporate the mixtures together. For best results, do not over mix this step.

Fold in the Chocolate Chips: Switch to a spatula and fold in the Dairy-Free Chocolate Mini Chips.

Scoop and Garnish: Using a cookie scoop, scoop the muffin batter into the muffin tin. Sprinkle the muffin tops with extra mini chocolate chips, chocolate chucks and sprinkling sugar. 

Bake: Bake for 20 – 25 minutes. A cake tester should come out clean when poked into the center of a muffin (melted chocolate is okay).

Cool: Let the muffins cool in the muffin tin and enjoy!

Eat within 2-3 days and store in an airtight container. When ready to eat, warm up in a microwave.

💡 Ashley’s Tips for Muffin Recipes

  • Mix the dry ingredients in a separate small bowl
  • In another bowl, mix the wet ingredients
  • Combine by pouring the DRY into the WET ingredients
  • DO NOT OVER MIX!

Where Can I find Coconut Oil?

Due to the increase of food allergies, coconut oil can easily be found at grocery stores or health food stores.

Why Did Coconut Oil Leak Out?

Coconut oil will leak out of the muffins if it was not properly mixed into the batter. When preparing the coconut oil, melt and cool so it can be properly mixed in with the other ingredients.

Ingredients
  

  • 229 grams (1 ½ cups + 2 tbsp) All Purpose Flour
  • 2 tsp Baking Powder
  • 114 grams (½ cup) White Sugar
  • 225 grams (1 cup) Silk Vanilla Oat Milk
  • 2 Eggs, room temperature
  • 114 grams Coconut Oil, melted and cooled
  • 128 grams (¾ cup) Enjoy Life Dairy Free Semi Sweet Chocolate Mini Chips + extra for garnish
  • Enjoy Life Dairy Free Semi Sweet Chocolate Chucks, optional for garnish
  • Sprinkling Sugar, optional for garnish

Instructions
 

  • Preheat oven to 350F. Prep muffin tins with muffin cups or grease the tin with vegan margarine and dusted with flour.
  • In a small mixing bowl, whisk together flour and baking powder. Set aside. In another bowl, mix together white sugar, oat milk, melted coconut oil and eggs. Use a hand mixer to beat the wet ingredients together until the coconut oil has completely mixed into the batter. 
  • Pour the dry ingredient mixture into the wet ingredient batter. Use a hand mixer to incorporate the mixtures together. Do not over mix this step. Switch to a spatula and fold in the Dairy-Free Chocolate Chips.
  • Using a cookie scoop, scoop the muffin batter into the muffin tin. Sprinkle with extra mini chocolate chips, chocolate chucks and sprinkling sugar. Bake for 20 – 25 minutes. A cake tester should come out clean when poked into the center of a muffin (melted chocolate is okay). Let cool in the muffin tin.

Notes

Storage: Store in an airtight container at room temperature. Reheat in the microwave and enjoy.

    I don’t know how you do it, but I never miss the dairy in your recipes. And coconut oil is my favorite baking oil. These were great.
